Food Truck RoundUp

Picture this: you’ve finished a full day of classes, completed a shift at work, and raced back to your dorm to throw on a sweatshirt before dinner. The moment you’ve been waiting for alllll day long has finally arrived- LU’s Food Truck Roundup is in full swing. Are you feeling hungry yet?

Now imagine yourself heading over to the LU Bookstore as raindrops start falling and smattering ALL OVER the ground (it’s okay, you can shed a tear or two). Dejected, you sit in your car with your friends and consider heading over to Montview or the Dining Hall to grab food instead. Liberty does have several fantastic dining options on campus! 

Then- right before your eyes- the rain STOPS. Sunshine peaks through the clouds over the football stadium, and you eagerly jump out of your car.

After all, who would pass up a chance to taste some local food truck food?

With jerk chicken tacos, homemade ice cream, and fresh coffee, you simply can’t go wrong.

Nomad Coffee, Uprooted VA, Homestead Creamery, Hibachi Guys, and Earl’s Carolina BBQ each parked their trailers out in front of the bookstore and set up shop for the evening. Students milled around the sidewalk and runners out for an evening jog paused to check out the menus. My friends and I thoroughly enjoyed sampling ice cream flavors and chatting with the owners of each truck.

If you ever get a chance to come out to a Food Truck Roundup here on Liberty’s campus, be sure to bring your wallet. Some of the trucks take Flames Cash, but it helps to have a couple dollar bills or your card too.

Uprooted’s jerk chicken tacos were our personal favorite (I could have eaten five of those things, no joke), and we also grabbed an iced Blue Ridge from Nomad Coffee on our way to watch the sunset at Snowflex. The Blue Ridge is definitely one of my all-time favorite coffee drinks; you’ll have to try it!

One of the best parts of life in the ‘Burg is that so many small businesses and local restaurants thrive here. The Food Truck Roundup showcased several of those businesses, and I’m hoping that we can add more trucks next time!
