NUTR 642 Nutritional Biochemistry II

Advanced study of the nutritional principles, physiology, and biochemical pathways of metabolism of proteins, carbohydrates, lipids, vitamins, and minerals as related to human health and disease.

Despite man’s sinful nature being uncovered by a single piece of food, a fruit, God created food to be good. He created food to provide us with energy, chemicals that the body can use to build and re-build our cellular structures, and key nutrients used in the regulation of many of our bodies’ systems. This course aims to provide a graduate nutrition student with the knowledge of these metabolic biochemical pathways and the chemical etiology for diseases resulting from malnutrition.

Discussions (4)

Discussions are collaborative learning experiences. Therefore, the student is required to create a thread in response to the provided prompt for each Discussion. Each thread must be at least 500 words and demonstrate course-related knowledge. For each thread, the student must support his/her assertions with at least two scholarly citations in AMA format. In addition to the thread, the student is required to reply to 2 other classmates’ threads. Each reply must be 200–250 words and incorporate at least one scholarly citation in AMA format. Case Study Assignment

Case studies allow students to apply course concepts to practical life situations related to nutrition. Each student will research a case study of a disorder or disease as assigned. Results of research will be presented in a paper addressing the criteria outlined in the assignment instructions. This assignment will be 1,000 words and requires 5 peer-reviewed sources. Micronutrient PowerPoint Assignments (2)

As a nutrition and/or public health professional, the student will have the opportunity to develop and deliver presentations regarding various nutrition-related topics.

Micronutrient PowerPoint: Presentation Assignment

The student will create a professional PowerPoint presentation of 10-15 slides that reviews the chosen vitamin or mineral supplement and follows the assignment instructions. The presentation must include the listed criteria in the assignment instructions and follow current AMA formatting guidelines.

Micronutrient PowerPoint: Narration Assignment

The student will revise his/her PPT presentation based on instructor feedback received from the submission of the Micronutrient PowerPoint: Presentation Assignment. Then, the student will develop a word-for-word narration for each slide in the notes section of his/her PPT. The student will record his/her narration using the tool within the PPT software. The student is to “present” as if he/she is actually speaking to an audience. The total length of the PPT presentation to be between 15-20 minutes. (CLO: E, F)

Quizzes (8)

Each quiz will cover the Learn material for the assigned Module: Week. Each quiz will be open-book/open-notes, contain 35 multiple-choice questions, and have a 1 hour time limit. Quiz time overruns will incur a 1-point deduction per minute over the set quiz time. (CLO: A, B, C, D, E, G)
